About The Hoof & Wing
Welcome to The Hoof & Wing. This is a blog about food - specifically, it's about meat and butchery. My name is Cooper, but most folks call me Coop, so you can too. A few notes about me: I haven't been in the butcher business long. In fact, I'm technically a meat cutter (or apprentice,) not a full-fledged butcher. I work at a small, family-owned meat market in Franklin, Tennessee that goes by the name "The Butcher Block." I would be remiss if I didn't mention the butcher there, Emily - she's taught me everything I know about meat and butchery and still teaches me every day. Kudos to you and your patience, Emily.Â
That being said, I'm here to talk about meat and food, so whether you're here for entertainment or learning, please, kick your shoes off and stay awhile. I'm learning right alongside you, dear reader. I hope you enjoy.Â
PS. Perhaps you are not a big meat eater; that's fine. We all walk different paths in life and we all have our preferences. I appreciate you spending your time here anyway.Â
